Chef Boy-R-Avery
Avery Knox has been a chef for five years now, and now he finally has his own restaurant. `The Pit’ is something that doesn’t look like much, but to Avery, it has everything for anyone at anytime.
`The Pit’ is a New York-style restaurant with a whole lot of southern hospitality in it,” said Knox.
Knox wanted to become a chef because he liked food and experimenting with different spices and sauces. But more importantly to Knox, the main reason why he got into cooking was seeing the reaction of everyone eating his food. The person that inspired Knox to become a chef was his past friend “Chef Duke.”
Knox lived in Florida for 16 years, and that is where he met “Duke.”
“He was a great family man. He could cook anything, and his food was so great all the time,” said Knox. “He was a great man to be around, and he always had a smile on his face.”
“I started working at a little caf? called Morrison’s caf?. I did many things for this caf?; I worked my way up from cleaning out the storeroom to all other types of things,” said Knox.
After coming back to Georgia, which Knox needed to do for family reasons, he started to work at the Georgia College & State University cafeteria as a part-time pizza chef.
“With this I got my foot in door,” said Knox.
Then Knox learned he was going to become the head chef at `The Pit.’ Knox really enjoys his job and everything involved with it.
If you have ever seen Avery Knox, he will have nothing but good things to say to you. Knox feels GC&SU has a great bunch of students. He thinks they are very fun and outgoing. Knox also thinks very highly of the staff here at GC&SU.
“The whole faculty here at GC&SU is very nice, and no one has ever given me a problem here,” said Knox.
Knox said, “If you have not been in `The Pit’ yet, please come in and give us a shot. If you come in you will get excellent food, a smile, and great conversation.”
